- In a large bowl, use an electric mixer to beat together the butter and sugar until light and fluffy. Beat in the molasses and egg. Gradually add the dry ingredients, stirring until everything is well combined.
- Stir in the chopped crystallized ginger.
- Drop the dough by teaspoonfuls onto the prepared baking sheets, about 2 inches (5 cm) apart. Bake for 10 to 12 minutes, or until the cookies are golden brown.
- Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
